We did a pretty tame Independence Day weekend, but I did want to share a few things with y’all!
Saturday we went to a hamburger cook out/pool party hosted by one of our favorite in-town couples. It was about 98 degrees, so to stay outside, you had to stay in the water. Luckily I had these sweet drink floats to keep my cold beverage nearby. Cucumber vodka punch not included.
Sunday we hosted another of our favorite couples (and their FIVE dogs) for a more low key grilling session at our home. While we kept the menu simple, this reminds me of a few favorite festive recipes from yesteryear.
Fruity Champagne Punch
2 bottles champagne, chilled
1 2 liter bottle Sprite, chilled
Splash of lemonade to taste
A mixture of patriotic colored fruits: strawberries, blueberry, raspberries, watermelon, etc.
If you’re making this outside, I would make some fruit & sprite ice cubes. As simple as it sounds: fill ice cube trays with a mix of different colored fruits, cover with Sprite, and freeze overnight. Use Sprite from the bottle for the punch so it won’t water your champs down more.
Mini Flag Fruit Pizzas
1 package break and bake sugar cookies
1 container whipped cream
2 tablespoons confectioners sugar
Same variety of fruits from the punch
Seriously this is so easy. Break and then bake the cookies per package instructions. If you’re feeling salty, make them from scratch (You go, girl!). Place them on a rack to cool. Mix the whipped cream with the sugar, and cover the cookies. Decorate with fruit in any patriotic design that strikes your fancy. Then, you stuff.
